About Our Products

Mole comes from a family of sauces prepared throughout the Oaxaca and Puebla regions of Mexico and is characterized by a complex, layered flavor derived from intricate blends of dried chiles, spices, fruits, and seasonings. Mole sauce can vary significantly in flavor and complexity depending on the specific recipe and regional variations. Our Oaxacan moles are a celebration of time-honored recipes handed down through generations. Mole adds a depth of flavor and richness to dishes, making it a beloved and iconic component of Mexican cuisine.

Mole is known for its versatility and can be served with a variety of dishes, including poultry, pork, beef, enchiladas, tamales, and vegetables. It adds flavor to soups, sauces and marinades, and can be used as a dip or salsa, making it an ideal pantry staple. Explore recipes HERE.

Oaxaca is famous for its bountiful and complex moles, and while each of the three flavors that we have chosen to bring to your kitchen maintain the richness and depth that Oaxacan food is known for, they also each have their own characteristics.  Mole Negro is our most complex and rich sauce - definitely a show stopper on the table! Rojo is lighter, tomato-based and chile-forward in flavor. And don’t be fooled by the unusual name of Coloradito, which we feel is the most balanced and versatile of them all - a sauce you will want to put on everything!

Adobo sauce is a rich, flavorful sauce commonly used in Mexican cuisine to marinate, season, or braise meats, poultry, seafood, and vegetables. We make ours with a combination of dried chili peppers, garlic, vinegar, herbs, and spices.

Adobo sauce is primarily used to impart flavor and tenderize meats, poultry, seafood, or vegetables before grilling, roasting, or stewing. Our adobo sauces are also great added to sauces and stir-fries and used as a finishing sauce for well balanced flavor.

Chintestle (or chintextle) is a Oaxacan smoked chili paste made from dried chili peppers, avocado leaves, and garlic. This incredible flavor enhancing paste becomes the base for our Honey Orange Chintestle Adobo Sauce, which is ready to use straight from the jar!

Barbacoa refers to a Mexican preparation of meat that’s slow cooked in an underground steam oven until tender. Our smoky, spicy and tangy Barbacoa Adobo Sauce tastes just like the real deal, no earth-oven needed!

Escabeche is a staple at the Mexican table. It’s a spicy pickled condiment made by marinating vegetables (such as chili peppers) in a mixture of vinegar, water, herbs, and spices to preserve the crisp consistency and tangy flavor to enjoy later.

Escabeche can be enjoyed atop tacos, alongside grilled meats and vegetables, or stacked on sandwiches, to provide contrast to richer flavors with its acidity and crunchiness.

We use only natural, locally-sourced, and non-GMO ingredients. All of our products are gluten-free and vegan, and don’t contain any artificial flavors or preservatives, ensuring a pure and natural taste that respects both your palate and your health.

Mole and Adobo Sauces do contain nuts and seeds, the types and amounts of which differ for each recipe. Our sauces are packaged at a facility that processes potential allergens such as eggs, soy, and nuts. Please refer to the individual ingredient list for each sauce.
