Coloradito meatloaf

I adapted a Meatloaf with Chile sauce recipe from a recent Texas Monthly. Made it with Turkey and used mole Coloradito instead of the Chile enchilada sauce. Delicioso! And saved about 45 minutes cooking time to make the sauce.

More please…

This sauce is so perfect on everything from enchiladas to even burgers and eggs. I even warmed some up for Thanksgiving dinner and took the credit. No regrets.

So delicious!! I’m obsessed!!

I’ve tried all three flavors, and all of them are amazing but this one is my favorite! The flavor is exactly what you want with a mole and I’m so glad I found Ya Oaxaca in my local market. I’ve been using it to make mole enchiladas, for the best easy weeknight meal. It’s special to be able to have this quality of a mole at home, it’s like something you’d typically only get at a restaurant (even then a restaurant might not be as good as Ya Oaxaca!)
