Huevos Rancheros with Salsa Chile de Agua
This simple one-pan and 3-ingredient recipe for Huevos Rancheros makes for a satisfying and savory breakfast that can be prepared in just 10 minutes. Huevos Rancheros, or ranch-style eggs, is a classic Mexican and Tex-Mex breakfast that originated as a hearty meal for ranch workers. Our version stays true to the classic, using corn tortillas, fried eggs, and our Salsa Chile de Agua made with heirloom chile de agua and fire-roasted tomatoes for a bright, flavorful salsa with subtle heat. Optional additions like cilantro, avocado, beans and queso fresco can be included based on what you have on hand and your personal taste.

Ingredients:
4 corn tortillas
4 eggs
1 jar ¡Ya Oaxaca! Salsa Chile de Agua
Vegetable oil for frying, such as avocado oil
Process:
1. Heat a frying pan on medium heat, add enough oil to coat the pan, and then fry your tortillas for about 15 seconds on each side
2. Place two tortillas on each plate and add a bit more oil to the pan if needed to fry your eggs. Sunny side up is classic, but you can cook the eggs to your preference.
3. Top the tortillas with the fried eggs and then add a generous serving of salsa on top and dig in!
