Ingredients
1 whole cauliflower
½ jar Ya Oaxaca! Mole Rojo
¼ jar ¡Ya Oaxaca! Escabeche, for serving
8-10 twigs fresh thyme
1 small bunch chives, minced
2 tablespoons butter
Sea salt and pepper, to taste
Olive oil, for searing
Instructions
Preheat the oven to 350°F (175°C).
Prepare the cauliflower: Clean the cauliflower and slice it into 1-inch thick steaks. Drizzle with olive oil and season generously with salt and pepper.
Sear the cauliflower: Heat a pan over medium-high heat. Sear the cauliflower steaks until golden brown on one side, then flip.
Roast in the oven: Transfer the pan to the oven and roast for 20 minutes until the cauliflower is tender. Check doneness by piercing with a fork or knife.
Prepare the mole: While the cauliflower is roasting, heat half a jar of ¡Ya Oaxaca! Mole Rojo in a small pot over low heat. Let it simmer gently.
Finish the cauliflower: Return the pan to the stovetop over low heat. Add butter, thyme, and chives, allowing the butter to melt and coat the steaks with herb-infused flavor.
Garnish and serve: Spread a layer of warm mole on the plate, place the cauliflower steak on top, and drizzle with additional mole. Sprinkle with minced chives and serve with escabeche to contrast the rich flavors of the dish.
